the biryani was invented by the mughals, at the time of war when soldiers come from war they want a full meal .. so making chicken,rice was lengthy so the cooks of mughals invented the biryani in which rice and chicken were cooked together. earlier the meat biryani was famous,when you will travel india you will find various types of biryani like chicken biryani,mutton biryani,veg biryani,fish biryani,egg biryani.

Step 1- Preheat a pot in which add 2-3 cups of water and let it boil.
Step 2- Buy the best quality basmati rice,don’t compromise unless you might not be able to taste the best flavorful chicken biryani.
Step 3- Soak the rice for atleast 20 minutes.
Step 4- Take a piece of muslin cloth. Add 3 black cardamom,6 green cardamom,6 cloves,6 black pepper,2 bay leafs,3 cinnamon stick and made a bag of it and tight it so that we get the flavours only and not the whole spices.
Step 5 – Add the muslin cloth bag into the boiling water.
Step 6- Add 1 tspn caraway seeds (shahi jeera) and salt to taste in the boiling water.
Step 7- Now lets start marinating the chicken. I had taken 800 gm chicken cutted into large pieces.
Step 8- Add ginger 2 tspn garlic paste,1 tspn red chilli powder,salt to taste,1 cup yogurt,1 tspn garam masala powder,1 tspn green cardamom powder,1 cup brown onions,4 tspn melted desi ghee. these all are the secret ingredients for a good biryani. in india, biryani is mostly made in lukhnow and hyderabad.they don’ prefer making biryani without ghee.
Step 9- Add 2 tbspn fresh chopped coriander leaves, 10-12 mint leaves, 2 green chili broken.
Step 10- Mix all the ingredients together with the chicken. after mixing add 1 tspn turmeric powder and 1 tspn lemon juice and mix the chicken gently.
Step 11- let the chicken get marinated for 30 minutes so that it gets nicely marinated with all the spices we had added to the chicken.
Step 12- the water had started boiling,now add the soaked rice,keep stiring the rice so that it get uniformly cooked and here we must cook the rice until 3/4th done and not more than that unless it becomes messy.
Step 13- the rice is now 3/4th done. layer the 3/4th rice on the chicken, i will also allow littel bit of water to also come along with the rice. so that the biryani remains nice and moist.
Step 14- spinkle 1 tspn coriander leaves,6-8 mint leaves , 1/2 cup brown onions ,1/4tspn garam masala powder,1 tspn green cardamom powder on the layered rice.
Step 15- now layered the rest of the rice on top of it and add 2 tspn brown onions,1/4th tspn garam masala powder,1/4th tspn green cardamom powder and few strands of saffron soaked in milk.
Step 16- finally 6 tspn melted ghee all over the biryani to keep it nice and moist.
Step 17- Now place the pot on the flame. for biryani actually you need to seal the pot, so i got some flour dough. plain it up and put it on the edge of the pot ,surround it.
Step 18- Cover the lid on the dough and press it. cook it on medium-high flame for 15 minutes.
Step 19- Now cook it for another 6-8 minutes in low flame. if you are fear of buring the chicken you can also add a tawa at the flame and the pot above it.
Step 20 – Now its time for celebration as the biryani is now ready.you can serve it with coriander leave and enjoy the biryani with onion raita.

Ingredients for making hyderabadi dum chicken biryani :-
For Preparation of Rice:-
- 1 and 1/2 cup of basmati rice

- 1 tspn coriander leaves
- 6-8 mint leaves
- 1/2 cup brown onions
- 1/4tspn garam masala powder
- 1 tspn green cardamom powder
For 2nd layering of rice
- add 2 tspn brown onions
- 1/4th tspn garam masala powder
- 1/4th tspn green cardamom powder
- few strands of saffron soaked in milk
- 6 tspn melted ghee

12- you need to seal the pot, so i got some flour dough. plain it up and put it on the edge of the pot ,surround it.
13- cook it on medium-high flame for 15 minutes. Now cook it for another 6-8 minutes in low flame.
14 – Now its time for celebration as the biryani is now ready.
1 Buy the Quality Basmati rice having long seeds and smells good.
2 Don’t use liver ,gizzard ,head of chicken and cut the chicken in large sizes i.e
1 ½ inch .
4- Cover the rim of the casserole with foil ,dough to trap the dum or use a cloth.
5- After layering the Chicken Biryani, Cook it on medium-high flame.
6. you can also use tawa if you are feared of burning the biryani
