Am really afraid of buying paneer from the market as plenty of them sold unfresh and adulteration paneer. whenever i want to make paneer recipes i prefer preparing paneer (cheese) at home at day before and put it in freezer so that it gets sponge.

So lets start preparing homemade fresh and sponge paneer.

Step 1- Switch on the stove and put a boiling pot on flame. Add the milk to it.

Step 2- While the milk boils, lets squeeze juice from the lemon.

Step 3- Squeeze the lemon with the help on a squeezer in a bowl.

Step 4- Turn off the stove when the milk is boiled.

Step 5- We can see the milk had started boiling ,now add the lemon juice to the milk littel at a time and stir in regularly.

Step 6-the milk will now start to ferment. now set the milk pot aside.

Step 7- after 2 minutes ,start stiring the milk.

Step 8- We can see the fermentation of the milk is complete and can see the paneer is separated.

Step 9- Now take a bowl and a plain cotton cloth ,now start filtering the paneer

Step 10- Don’t leave the paneer for more time unless it may get harden hence filter it quickly.

Step 11- Pour some cold water to the paneer so that it washes away the lemon flavour.

Step 12- now remove the excess water from the paneer by squeezing the cotton cloth, so that the paneer gets dry.

Step 13- now put the cloth on a plain plate and press it with a heavier substance like a marbal roller or a tawa.

Step 14- This will help in squeezing the water completely from the paneer and it will further solidify the paneer.

Step 15- our soft and fresh homemade paneer is now ready. ( 1 litre milk = 200 gm paneer)

3- We can see the milk had started boiling ,now add the lemon juice to he milk.

4-the milk will now start to ferment .after 2 minutes ,start stiring the milk.

5- the fermentation of the milk is complete.now take a bowl and a plain cotton cloth ,now start filtering the paneer

6- Pour some cold water to the paneer so that it washes away the lemon flavour.

7- now put the cloth on a plain plate and press it with a heavier substance.

8- This will help in squeezing the water completely from the paneer.

9- put the paneer to the freezer so that it gets more soft and sponge.

Instructions-

  1. For 250 gm paneer you need 5 cups of milk or 1 litre. you can increase or decrease as per your requirements.
  2. Make the milk boil for atleast 5 minutes.
  3. switch off the stove before you start adding lemon juice to the milk .

Bonus tip on making paneer at home-

For making sponge paneer put it into the freezer for 6-7 hours so it becomes a littel tight and sponge.
