Butter chicken (murgh makhani) is basically prepared with lots of tomatoes,butter and fresh cream. I really love butter chicken recipe, especially when i want a healthy diet as it contains lots of butter (huge fat). it is basically served with naans,plain rice,pulao etc.

Interesting fact about butter chicken ( Murgh makhani)-

Butter Chicken or Murgh makhani recipe was invented by  Kundan Lal Gujral of Moti Mahal Delux , a famous restaurant in delhi where people order a lot of tandoori chicken so they had to prepare a lot of tandoori chicken for the day. At the night a lot of chicken tandoori was left in the stock so kundan lal gujral decided to make a dish of it so that it won’t get wasted. he after that cooked the tandoori chicken with butter,tomato puree and fresh cream and finally named it murgh makhani i.e butter chicken recipe.

Step by Step photos on how to make easy butter chicken recipe ( murgh makhani )

Step 1- Cut 1/2 kg plump red tomatoes into small pieces and set is aside in a bowl.

Step 2- Put a pan on the stove and pour 1 tblspn oil and add 2 tblspn butter to these.

Step 3- now add 7-8 green cardamom,3-4 blades of mace and stir it well.

Step 4- Now add 1 tspn chopped garlic ,cook it till it gets littel brown and add the chopped tomatoes into it.

Step 5- cook the tomatoes until it start melting a bit till then lets cut some ginger and green chili.

 

Step 6- Cut 1 tpsn ginger into juliennes the way am cutting it first in thin slices then in fine juliennes as shown below in th picture.

Step 7- In the same way cut 3-4 green chilli that must be deseeded and cut it also in fine juliennes.

Step 8- we can see the tomatoes are now almost pulpy and had started melting, sort it for 2-3 minutes.

Step 9- Now add the tomato mixture into a blending jar and blend it finely and set it aside.

Step 10- Now switch on the flame ,put the pan and add 3 tblspn butter to it and let it melt.

Step 11- now add the ginger juliennes and green chili juliennes that we had cutted earlier.

Step 12- now sort it for a minute and don’t let the butter get brownish.

Step 13- now strain the tomato puree mixture to the pan .

Step 14- Now we can see the tomato silky gravy,add 1 tblspn kashmiri red chili powder and salt to taste.

Step 15- Now let it cook for aleast 7-8 minutes so tha the raw materials of tomatoes get eliminated.

Step 16- Take out 800 gm cooked tandoori chicken in a bowl

Step 17- cut the tandoori chicken into medium sized pieces . the chicken must be on bone.

Step 18- Now we can see our tomato makhani gravy is almost ready so its time to add the tandoori chicken pieces.

Step 19- Add the tandoori chicken pieces into the tomato gravy and cook it well for 2-3 minutes so that the gravy gets coated to the chicken pieces.

Step 20- now add 1 cup of fresh cream and a pinch green cardamom powder into the pan for more flavor.

Step 21- also add 1 tspn honey to maintain the darkness and sweetness of murgh makhani.

Step 22- now we are going to add a secret ingredient for our butter chicken recipe i.e 1/2 tspn dried fenugreek leaves ( Kasturi meethi) and cook it for few minutes.

Ingredients :-

For making the tomato puree

  • 1/2 kg plump red tomatoes

  • 3 tblspn butter
  • 1 tblspn ginger juliennes

  • 1 tblspn kashmiri red chili powder
  • salt to taste

  • a pinch green cardamom powder
  • 1 tspn honey
  • 1/2 tspn dried fenugreek leaves ( Kasturi meethi)

11- now add fresh cream ,green cardamom powder, honey to maintain the darkness and sweetness of makhani.

12- add 1/2 tspn dried fenugreek leaves ( Kasturi meethi) and cook it for few minutes.

13- Now our butter chicken or call it murgh makhani is ready to be served.

Instruction –

  1. If you don’t have a tandoor at home ,roast it in oven or grill it and cook it in stove flame.
  2. i had purchased cooked tandoori chicken to make the recipe more easier
  3. Don’t grind the tomatoes until you cook it well unless it may give you uncooked flavor.

Bonus tip-

If you are not buying a cooked whole tandoor , i will suggest you to marinate the chicken for atleast 2 hours so that it gets soft.
