Chole or choley recipe is served with hot bhauras. chole bhature recipe is a combination of chole and bhatura i,e chana masala and fried bread.

Step 1- Take 2 cup of chickpeas,wash and soak it overnight or 8 hours.
Step 2- Again wash the chickpeas and put it on the cooker.
Step 3- Put 2 tspn salt,2 teabags,3/4 tspn baking soda and 2 cups of water in the cooker.
Step 4- Cook it in high flame until the first vessel comes after that cook it for 5-6 minutes more in low flame.
Step 5- take out the chickpeas when the cooker releases the complete pressure from the cooker. now these is our boiled chickpeas.
Step 6- to make the chole we need to prepare the spices first.
Step 7- Wash all the required vegetables first and let it get dried .
Step 8- Cut 6 tomatoes in large pieces so that it gets grinded well in the mixer and also cut some green chili and ginger.
Step 9- Now add the above pieces in a mixer jar and grind it very well.
Step 10- Heat the pan and pour some oil in it.let it get littel heated.
Step 11- After that add cumin seeds,pomegranate seeds, asafoetida powder, coriander powder and stir all the spices for a while.
Step 12- now add the grinded tomato mixture that we have grinded earlier into the pan and stir it for 7-8 minutes so that it cover all the spices.
Step 13- take out a 1 inch long ginger and cut it into long pieces as shown in the picture below.
Step 14- Add the above ginger slices into the pan mixture and stir it for 1 minute again.
Step 15- Till then lets cut out the panner in small cubes.
Step 16- the oil has now started floating out of the mixture. now add 2 cups of water to the pan.
Step 17- now add salt to taste and 1 tspn red chili powder in the pan and mix it well.
Step 18- now cover the lid and let it get cooked for sometime till it starts boiling.
Step 19- the gravy has started boiling,now its time to add the chickpeas into the pan. so add the chickpeas into the pan.
Step 20- Also add the panner (cottage cheese) and garam masala,mix all the ingredient well.
Step 21- Add some coriander leaves and cover the lid and let it get cooked for at least 5 minutes so the chickpeas and panner observes the spices well.
Step 22- the chole are ready. shift the chole to another bowl.
Step 23- Garnish the chole with some coriander leaves.

For boiling cheakpeas for chole recipe
- 2 cup chickpeas
- 2 tspn salt
- 2 teabags
- 3/4 tspn baking soda
- 2 cups of water
For making mixture paste
- 6 tomatoes
- 2 inch long ginger
- 3 green chilli
For cooking the choles
- 200 gm panner (cottage cheese)
- 3-4 tspn chopped coriander leaves
- 4 tspn oil
- a pinch asafoetida (hing)
- 1 tspn cumin seeds
- 1 tspn garam masala
- 1 1/2 tspn pomegranate seeds
- 2 tspn coriander powder
- 1/2 tspn red chilli powder
- 1/2 tspn red chili powder
Directions for making chole or chana masala-
1- Take 2 cup of chickpeas,wash and soak it overnight or 8 hours.
2- put it on the cooker and Put salt,teabags,baking soda and 2 cups of water.
3- take out the chickpeas when the cooker releases the complete pressure.
4- Cut tomatoes ,some green chili,ginger and grind it well.
5- Heat oil in a pan and add cumin seeds,pomegranate seeds, asafoetida powder, coriander powder and stir it.
6- now add the grinded tomato mixture that we have grinded earlier and stir it after that cover it.
7- Add ginger slices into the pan mixture and stir it for 1 minute again.
8- the oil has now started floating out of the mixture. now add 2 cups of water to the pan, salt to taste and red chili powder in the pan.
9- now cover the lid and let it get cooked for sometime.
10- the gravy has started boiling,now its time to add the chickpeas, panner (cottage cheese) and garam masala,mix all the ingredient well.
11- Add some coriander leaves and cover the lid and let it get cooked.
12- the chole are ready. garnish the chole with some coriander leaves.
- Before making chole soak it overnight and after that boil in well.
- paneer is optional in these recipe.
- if you don’t have tea bags, add tea in a cotton cloth and tighten it and add into the cooker.
- cook the chole recipe first after that the bhatura’s
Bonus tip on chole,choley,chana masala recipe-
Serve the chole with hot bhatura and some chopped onions,carrot or mango pickles.
