For making awadhi biryani,all you need is to have the ingredients required which makes it the most flavorful biryani recipe. Cooking awadhi biryani is very easy and simple. just do follow to below steps, i had also included photos so that it get more easier for you to make awadhi mutton biryani recipe.
Steps by Steps photos on how to make awadhi biryani-
Step 1-Soak the basmati rice for atleast half an hour.
Step 2-add 2-3 tbsp ghee / butter in a pan or pot and add 4 green cardamom,1 inch cinamon,8-10 cloves,1 bay leaf and 1/2 tspn cumin seeds and sort it for sometime after that add the chopped onions to it and fry it till it becomes light golden.
Step 3-i had already preheated the pot and water is boiling so lets add the soaked rice to the boiling water and also add salt to taste ,1 tspn rose water ,1 tspn screwpipe essense (kewra jal) in the boiling water.
Step 4-add mutton 800 gm to the pan as our onions are now fried well enough and cook it till the water comes out from the mutton.
Step 5- now add 2 tbsp ginger-garlic paste and mix it well and cook it for 5-10 minutes till the water is eliminated.
Step 6- for more flavour to the rice add 4-6 green cardamon,2 cinamon,6-8 cloves and a bay leaf to the boiling rice.
Step 7-after cooking the mutton well till the water soaks completely add 1/2 cup of fried onions and also add 4-5 tbsp yogurt and mix it well and cook it for sometime till then lets see the rice.
Step 8-the rice is almost done as its 3/4th cooked and we dont need to cook i further as the remaining would be cooked with the chicken.now pour the water from the rice and pour its water and keep the rice in a large bowl.
Step 9-now add 4-5 whole green chilli to the mutton and sort it for sometime and add a pinch of mace powder to the cooking mutton and also 1/2 tspn cardamon powder for a bit more flavour.
Step 10- now the mutton had fried well and almost the mutton is dry now lets start layering the rice.
Step 11- layer the rice above the mutton and add 1 tbsp ghee, 1 tbspn fresh cream, few ginger juliennes and few mint leaves and 2-3 tbps saffron water
Step 12- now layer the remaining mutton pieces above the rice and after that layer the remaining rice above it and follow the same procedure and add ghee,fresh cream,ginger juliennes,mint leaves and saffron water.
Step 13- now add 1/2 cup fried onions,some mint leaves, 1 tspn ghee ,saffron water .
Step 14-now make a dough from flour for stopping the steam to come out from the lid and apply the dough at the corners of the pot and put the lid above it and press it and cook it till the stream starts to come out from the dough for atleast 10-15 minutes.
Step 15- now our awadhi biryani is ready to be served.
Step 16- Garnish the awadhi biryani with some mint leaves and fried onions.

Ingredients for making awadhi muton biryani-
for cooking the rice-
- 400 gm soaked basmati rice
- salt to taste
- 1 tspn rose water
- 1 tspn screwpipe essense (kewra jal)

for cooking the mutton-

- 4 green cardamom

- 1/2 cup of fried onions
- 4-5 tbsp yogurt.
- 4-5 whole green chilli
- a pinch of mace powder
- 1/2 tspn cardamon powder
- salt to taste
- 1-2 tspn mutton masala powder
for layering the rice ( 2 layers)-
- 1 tbsp ghee,
- 1 tbspn fresh cream
- 1 few ginger juliennes
- 1 few mint leaves
- 2-3 tbps saffron water
- 1/2 cup fried onions
for garnishing the mutton biryani-
- 1/4 cup fried onions
- few mint leaves
Directions on making awadhi mutton biryani recipe-
1-add 2-3 tbsp ghee / butter and add the above mentioned whole spices and sort it for sometime after that add the chopped onions and fry it.

9- now add 1/2 cup fried onions,some mint leaves, 1 tspn ghee ,saffron water .now make a dough from flour and apply the dough at the corners of the pot and put the lid above it and press it .
10- cook it till the stream starts to come out from the dough for atleast 10-15 minutes.
11- now our awadhi biryani is ready to be served.
1-If you had time cook the fresh mutton unless a day before boil the mutton with some salt and garam masala powder and put it in refrigerator.
2- if you are feared of burning the biryani put a tawa at the bottom of pot and cook it in slow dum process.
